Dry Curry Udon

Curry is everyone’s favorite food. Its spiciness encourage people to have another bite, and it is mom’s favorite dinner preparation partner since the cooking direction is super easy as:

  1. Cut everything
  2. Put everything in a pan.
  3. The meal is perfectly ready to serve just in a few minute.   

Usually carbo for curry is either rice or bread, but today, I chose udon noodle to be accompanied by my curry. While many of you like curry for its spiciness, I recommend it with a hint of ricotta cheese for mellow flavor so that even small kids can be fall in love with it.

Dry Curry Udon

<Ingredients>

ingredients

  • 2 portion of frozen udon noodle
  • Half bunch of spinach
  • ½ cup of tomato
  • ½ cup of onion
  • 1 pack of shimeji mushroom
  • 2 bunches of scallion
  • 1 cup of ricotta cheese
  • Half pack of curry mix
  • 1 tablespoon of olive oil
  • 1/2 tablespoon of butter
  • 1 clove of garlic
  • Some salt and pepper

<Direction>

  1. Cut/slice veggies
    Slice onion, dice cut tomato, tear shimeji, chop spinach, scallion, and curry mix (to make it easy to dissolve).

  2. Cook udon noodle
    In a large pan, boil water and put frozen udon noodle. Cook about 3 min, and drain.Cook udon noodle
  3. Cook sauce
    In a large pan, bring heat to high and put garlic. When you can feel the savory flavor of garlic, add onion and mushroom. When they become golden color, add tomato, spinach, udon and stir well to loosen udon noodle.IMG_8176u

    Add curry mix, ricotta cheese, and butter, then stir well to mix everything. Sprinkle some salt and pepper, and cook until curry mix is fully dissolved.dry curry udon

  4. Set out dishsprinkle some chopped scallion for garnish.IMG_9504u
  5. Optional but very important step
    Change clothes if you are wearing white shirt. Can substitute with wearing additional layer of dark clothes 😛

Curry mix. While there are many spice, powder mix or paste to cook curry, I used this type of curry mix to cook most of my curry dish. The mix is hard block shape, but very easy to dissolve in water. With this curry, your curry will be thick and rich texture.

It is easy to cook curry and I’m very familiar to this type of curry mix for my cooking, I wanna make my own curry mix from scratch someday 🙂
