When I was spending time for one of my best hobbies(looking at grocery store weekly ad,) I couldn’t what my eyes were seeing. Avocado was on such a huge sale! Avocado is one of my favorite veggies, so I bought bunch of them immediately after seeing the ad.
But. I think I bought too much of them. All avocado started to be ripe at the same time, so if I’d left them more, it is ruined, that’s what I really hate to do.
After spending so much time thinking about what to make by using them, my brain hit an idea: cooking avocado pasta!
I wanted to make it for long time since I saw avocado pasta recipe, but I made other food before one left. So, I guess now is the time!!
Avocado Pasta Salad
<Ingredients for 1 serving>
- 80g short pasta
- ½ large avocado
- 2 tablespoon plain yogurt
- ½ large lemon
- 2 tablespoon parmesan cheese
- 2 tablespoon soy milk
- 1 tablespoon mayonnaise
- 2 tablespoon chopped onion
- ½ teaspoon garlic powder
- 1.5 tablespoon parsley
- Some salt and black pepper
- Optional for sliced lemon
- Cook pasta
In a large pan, fill water and bring it to boil. Add pasta and cook until they are softened.
- Make sauce
Mash avocado and combine with all other ingredients.
- Combine sauce and pasta
- Set out dish
Sprinkle some black pepper and place sliced lemon for garnish.
Creamy avocado sauce pasta. Better than cream based pasta!?
