I’ve introduced zucchini boat last year, and here is another recipe of zucchini boat.
Filling with some salmon came out awesome, but some people don’t like fish, so this one is fish free recipe. Instead of using salmon, I used potato salad. Creamy potato salad on zucchini boat with cheesy flavor…

Potato Zucchini Boat
- 1 medium russet potato
- 2 large zucchini
- 3~5 mushroom
- ½ cup broccoli
- 1 teaspoon butter
- 2 tablespoon soy milk
- 1 teaspoon garlic powder
- Some salt and pepper
- Some shredded cheese
- Some panko crumbs
- Some oregano
- Prepare boat
Cut zucchini lengthwise and scratch flesh. Keep the flesh for filling.
- Prepare filling -1: Boil potatoes and broccoli
In a small pan, fill some water and bring it to boil. Add sliced potatoes and cook about 10 min. Add broccoli and cook another 3 min, and drain.
- Prepare filling-2: Cook mushroom with butter
- Preheat oven to 350° F
- Create filling
Mash potatoes. Add broccoli, zucchini flesh, mushroom, soy milk, garlic powder, salt and pepper then mix.
- Load up boat
Put filling on boat and sprinkle cheese and panko crumbs
- Baking time!
Bake the boats until cheese is melted
- Set out dish
Sprinkle some oregano
