Burdock Salad

I used to go to Souplantation when I was in LA, but not here since I can’t find it I my neighbor now.

 

Just for your information to those who never been to there, Souplantation is all you can eat salad bar with not only just veggies but also their original mix of salad with pasta, beans, grains. You can also find their made from scratch soup, pizza, and they even have soft serve ice cream with syrups. Mmm, as my mind goes back the nice old days, I really want to go to Souplantation again!

 

So to recover from a little homesick, I’ll introduce unique salad, burdock salad!

 

Burdock has earthy flavor and good sources of fiber, so it’s good to have it when you feel stuck on your stomach and want to get away from that without medicine.

 

Creamy mayo and a pinch of citrus flavored ponzu and wasabi, your burdock salad becomes your must try salad!

Burdock Salad

<Ingredients>

  • 2 large burdock – shredded (about 2 cups)
  • 1 large carrot – shredded (about 1 cup)
  • 2 bunches of scallion
  • 3 tablespoon mayonnaise
  • 2 teaspoon ponzu sauce
  • Some wasabi paste
  • Some black sesame seeds

 

<Directions>

  1. Cook burdock
    In a large pan, fill water and bring it to boil. Add gobo and cook for about 3 min. Drain.

  2. Toss veggies
    In a large bowl, put gobo, carrot, and scallion and toss well.
  3. Seasoning
    Put all other ingredients and toss well.
