I can’t believe that sweet potatoes are now one of my favorite food.
When I was a child, sweet potatoes are the one I used to avoid. The reason was the sweetness from the sweet potatoes itself was too weird for me.
But today, the natural sweetness is ideal for baking cakes, allowing me to reduce the amount I need to put on my cake batter. Also flavor of it is unique and it makes my tummy full faster than other snacks.
I already introduced some of the recipe that uses sweet potato for baking, but this is also the one you shouldn’t miss it! 😀

Sweet Potato Cake
<Ingredients>
- 115g unsalted butter
- 115 g all purpose flour
- 1 teaspoon baking powder
- 2 large eggs – beaten
- 180g sweet potatoes – peeled and mashed
- 70g sugar
- 1 tablespoon rum
- 80g sweet potatoes – unpeeled and dice cut
- 1 tablespoon sesame seeds

Preheat oven 400 degree
Cream butter
Add sugar and mix well
Add eggs little by little and mix well
Add mashed sweet potatoes, sesame seeds and rum. Mix well.
Prepare baking
Add flour and mix lightly, then transfer dough into baking pan. Place dice cut sweet potatoes and bake in oven for about 30 min
Remove from the oven and cool it down
The edge was nice and crispy!
