Asian Flavored Corn and Egg Soup

Usually if my main dish is Chinese food, I pair up with wonton soup without wonton but with seaweed and scallion. (Sounds a little Weird?;) ) But as I was making mapo tofu, I wanted to try something different. I’m craving food so much lately, so I choose something can stock up my tummy: cream corn!

I think I used to have it in my school lunch, so creamy sweet corn and egg with savory flavor of sesame oil caused nostalgia that night.

Asian flavored corn soup. If it hit your mind, your tummy wants that so cook it right away!

Asian Flavored Corn and Egg Soup

<Ingredients>

  • 1 can of cream corn
  • 1 medium carrot – shredded
  • 1 cup water
  • 1.5 tablespoon chicken soup stock
  • 1 large egg – beaten
  • 1 bunch of scallion – chopped
  • Some salt and pepper
  • Some drop of sesame oil

Direction

    1. Warm up soup
      In a large pot, put cream corn, water and bring it to boil. 
    2. Seasoning
      Add chicken soup stock and salt and pepper
    3. Add egg
      Reduce heat to low and add egg. Stir some time and when the egg is half done, transfer them to bowl. Sprinkle some scallion.

It’s good on cold day. Even though it is spring and summer is right on corner, keep warm yourself with this tasty corn soup!
