Thai Style Glass Noodle Salad

Do you like noodle? How about salad?

 

If you check both question to YES, I’d recommend you to try this Thai flavored glass noodle salad. Me as a noodle lover, I grab a variety of noodle to enjoy tasty food like udon, chow mein, pad thai, or pasta. They are all my regular menu every season, but because it is so hot recently, I’d like to introduce nice cold salad by using other type of noodle: glass noodle!

 

The clear thin noodle is enjoyable when it goes through your throat, and zesty lime and fish sauce dressing refresh your mind from the scorching heat.

Thai Style Glass Noodle Salad

<Ingredients>

  • 50g glass noodle
  • 1 medium carrot – shredded
  • ½ cup green bean – sliced
  • ⅛ large onion – finely sliced and soaked in water
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • ½ large lime for juice
  • Some scallion – chopped

 

<Direction>

  1. Cook green bean and glass noodle
    In a small pan, fill water and bring it to boil. Add green bean and cook for about 3 min. Remove green bean from the pan then put glass noodle. Wait for about 1 min and drain.
     

  2. Combine all ingredients together

Mmm, I want a huge plate of this salad, not just small plate of it as the side dish!
