Ground Tofu with Mint Sauce

I saw fresh and beautiful mint leaves in my local store, and my mind are stuck to think about this dish. Usually I use basil for my herb to create tasty dish, but this mint looked so perfect to be on my dinner plate, so here it is!


With a complex of herbs and Asian must have sauce, plain tofu and veggies are magically turn to tasty dish. Even though the ingredients are more than my usual recipe, just give it a try and you won’t regret it!

Ground Tofu with Mint Sauce

  • 1 pack firm tofu – pressed and roughly mashed
  • 1 large carrot – chopped
  • 3 shiitake mushrooms
  • 2 cloves garlic – chopped
  • ½ large lime for juice
  • 1 tablespoon fish sauce
  • ½ tablespoon soy sauce
  • 1 teaspoon sugar
  • ⅓ large onion – chopped
  • ⅓ cup mint leaves
  • 3 stems coriander – chopped
  • 2 small Thai chili – chopped
  • 1 tablespoon olive oil
  • 1.5 cups of cooked rice



  1. Cook veggies
    In a large pan, put olive oil, garlic, thai chili and bring it to medium high heat. Add onion, carrot, shiitake mushroom. When veggies are soft, add tofu.
  2. Seasoning
    Pour fish sauce, soy sauce, sugar and splash lime juice. Add mint leaves, coriander. Stir well.
  3. Set out dish
    In a bowl, put rice, veggie & tofu over rice and mint for garnish.

This time I made it with over rice dish, but it is great with rice paper and build your own spring roll. Which one do you prefer? Give it a try and let’s get the answer!
