When I cook thai flavor of fried rice, I usually use basil to give it exotic flavor, but this time I wanted to have more refreshing taste, so I used a bunch of fresh mint.

Mint Fried Rice
<Ingredients>
- 1.5 cup cooked rice
- ½ large king oyster mushroom
- 1 large carrot
- ⅛ large onion
- ⅓ lime for juice
- 1 teaspoon galangal
- 1 small thai chili
- 1 clove garlic
- ¼ cup fresh mint leaves
- 2 tablespoon fish sauce
- 1 teaspoon sugar
- Salt and pepper
- 1 tablespoon olive oil
<Direction>
- Heat up pan and cook veggies
In a large pan, put olive oil, galangal, thai chili, garlic and bring it to medium high heat. Add onion, carrot, mushroom and cook for about 5 min.
- Add rice and mint leaves
- Seasoning
Pour fish sauce, sprinkle sugar, salt and pepper and splash lime juice.
