Homemade jalapeño Pickles

I like spicy food, so I have a solid background of building a good relationship with anything to make my food spicy. But, I’m still working on it with the world-famous spicy fruits: Jalapeños. 

Well, I have some excuse. When I lived in an Asian country, I never met jalapeños, so the length of history between us isn’t that long. But, who thinks this could be the reason for betrayal? Sometimes their level of spicy is just manageable, but most of the time they are either too mild like bell peppers or too hot that almost make me a fire-breathing dragon. If I get the super hot jalapeños on my first bite, I have to give up the rest of my meal because I was already full with water. 

My precious meal. Just 1 bite can ruin my favorite time in my life. 

Sometimes it’s so tempting to avoid getting jalapeños, but with Mexican food, jalapeños are sub characters who can actually act like the main character. Without them, my meal would never be perfect. 

Just eating them raw, grilled or stewed has a 50/50 chance of being mild or hot, but I think pickled is the best way to enjoy jalapeños. If they are mild, you get delicious jalapeño pickles: if they are super hot, they can add a nice kick. 

While it is true that even jalapeño pickles can be super hot, but let’s cook homemade jalapeño pickles so you can feel extra intimate for the jalapeños and kindly allow them even if you picked an extremely spicy one!

Homemade jalapeño Pickles

*makes pickles for 1 pasta sauce jar

  • 6 jalapeno
  • 200ml white distilled vinegar
  • 300ml water
  • 2 teaspoon sugar
  • 1/2 teaspoon salt


  1. Mix vinegar, water, sugar, and salt in a small pan. 
  2. Bring it to boil and add jalapeno. 
  3. Remove from heat and let it cool down. 
  4. When jalapeños are cooled down, transfer them in a jar and store in a fridge.

Umm, mild~medium spicy one is nicely pickled and brings nice flavor to my food, and hot one makes me obsessed with more jalapeños! In fact, I’m actually expanding the recipes with these homemade jalapeño pickles:) Stay tuned for upcoming postings!
