Sometimes I crave for nacho. When you pull a stack of crunchy tortilla chips from a plate, melting cheese stretches as if they still want to be on the plate, and spicy chili and bean scent spread around your dining table. Even though you are about to eat, your mouth and stomach insist you bring the nacho immediately to your mouth.
If you eat nacho at a restaurant, chili is made from beef, but since I’m vegetarian, I’d like to cook my own nacho by using soy chorizo from Trader Joe’s!

<Today’s Recipe>
Soy Chorizo Nacho
<Ingredients>
- ¼ soy chorizo from Trader Joe’s
- ⅓ can of cuban bean from Trader Joe’s
- ¼ large onion – chopped
- ½ medium carrot – chopped
- ½ jalapeno – chopped
- ½ cup shredded cheese
- 1 tablespoon olive oil
- ⅓ or ½ bag of tortilla chips
- ½ large avocado
- Some ranch
- Some salsa
<Directions>
- In a pan, pour olive oil and bring it to medium high heat. Add onion, carrot, jalapeno and cook for about 5min.
- Add cuban beans, chorizo and cook for another 5 min.
- Sprinkle cumin powder, garlic powder, and remove from heat.
- Spread tortilla chips on a baking pan and put veg-chorizo. Sprinkle cheese and put it in an oven and broil until the cheese is melted.
- Place avocado and ranch. Put salsa on the side and enjoy!
