Curry Quinoa

Curry is everyone’s favorite. If you just say curry, there are many types of curry: Red curry from Thai, Tikka Masala from India, Curry doughnut from Japan and much more! 

I think the key is that curry can go with any grains. Rice of course, bread for sure, and noodle, heck yeah! 

So I bet curry can go with quinoa too, right? Here is a key to the tasty dish!

Curry Quinoa

<Ingredients>

  • 1 cup onion – chopped
  • ½ cup carrot – chopped
  • 1 cup broccoli stem – chopped
  • 1 roma tomato – chopped
  • 1 clove garlic
  • 1 tablespoon olive oil
  • ½ teaspoon turmeric powder
  • ¼ teaspoon fennel seed
  • ¼ teaspoon cumin powder
  • 1 cube of Japanese curry block
  • 1 cup dried quinoa – washed and drained
  • 1 3/4 cups water
  • Some salt to taste

Garnish

  • Jalapeno – minced
  • Some corn

 

<Directions>

  1. Pour olive oil in a pan and bring it to medium high heat.
  2. Add fennel seed, garlic, onion, carrot, broccoli stem and cook for about 5 min.
  3. Add all other ingredients and close the lid.
  4. When water is boiled, draw a few big circle to mix all ingredients and reduce heat low and cook for about 30min.
    *To avoid burning the bottom of a pan, occasionally stir quinoa. 
  5. Transfer quinoa to a plate, decorate them if you want and enjoy!

Ummm, there must be some curry which I never tried yet. My culinary journey has just started, and still keeps going!
