The last fruit jelly I made, peach jelly, was good. The silky texture on my tongue and chunky sweet yellow peach feels nostalgic for me and makes me want to eat more. I bought a big bag of yellow peach and nectarines at the grocery store the other day, and since the last one was peach flavor, let’s spot a light on nectarine this time. I remember I had mashed, smooth fruit jelly when I was a kid, so follow my memory to have yummy snacks with nostalgia!
<Today’s Recipe>
Nectarine Jelly
<Ingredients>
- 2 large nectarines
- 1 teaspoon unflavored gelatin
- ½ lime for juice
- Optional – whipped cream, cube-cut nectarine
<Directions>
- Peel nectarine skins and put the fruits in a blender. Turn on the switch until they are smooth.
- Transfer the liquid in a pot and splash lime juice and gelatin.
- Bring it to boil and stir well to dissolve the gelatin. Remove from heat.
- Let it sit until they are not too hot, and transfer the liquid in cups.
- Set the jelly in a fridge for about 1~2 hours.
Pretty easy, simple jelly for the perfect summer snack! mashed fruits jelly gives different texture from ordinal jelly, and I l love that because I feel like I’m eating extra nutrition! Should I eat it as a midday snack or refreshing dessert after a nice hot shower?;)
