I’m still learning about quinoa. So most of the time when I cook quinoa, there would be some leftover for not enough for 2 people but I need to cook meals for 2. This is the perfect moment to show my creative cooking skill! Adding some veggies together, it can grade up from just plain quinoa to tasty quinoa salad!
Quinoa and Vegetable Salad
- ½ cup cooked quinoa
- ¼ medium carrot – chopped
- ½ large tomato – chopped
- 3~5 radish – chopped
- ½ cup chickpea – drain
- 1 tablespoon feta cheese
- 1 tablespoon olive oil
- 1 tablespoon parsley – chopped
- ½ large lime for juice
- Some black pepper
Combine all ingredients together and serve!
Great for brunch, lunch or a potluck party in a park! Actually I used leftover-veggies/quinoa/cheese and made this by accident, but I should cook this fresh and enjoy a whole bowl of them!
