Green Curry

Thai curry.

Spicy yet mellow flavored soup with oriental vegetables attracts people for its flavorful taste. Even though they are called “curry,” they don’t have similar flavor like Indian cuisine which uses cumin spice. When I first tried Thai curry, I enjoyed the mellow flavor coming from coconut milk in curry in the first bite, and gradually started to feel the heat from the spice. When I go to an Asian grocery store, I always spend several minutes in front of the curry paste aisle because I wonder which one is the best: red curry green curry, yellow curry, or penang curry. When I was in Seattle, I got red curry so this time I chose green because some say green curry is the hottest.

Green Curry

  • 1 tablespoon green curry paste
  • 1 teaspoon brown sugar
  • 1 can coconut milk
  • 1 cup water
  • 1 cube veg soup stock
  • 1 tablespoon fish sauce
  • ½ lime for juice
  • 1 tablespoon olive oil


  • ½ medium carrot – cut into bite size
  • 1 Mexican squash – cut into bite size
  • 2 tablespoons corn


  • 1.5 cup rice
  • 1.5 cup water
  • Some sesame seeds
  • Some parsley – chopped



  1. Cook rice. When rice is cooked, mix with sesame seeds and parsley. Set aside.
  2. Pour olive oil in a pot and cook green curry paste for about 2 min. Add veggies and cook for several minutes.
  3. Pour coconut milk, water, veg soup stock and bring it to boil. Reduce heat and pour fish sauce, splash lime juice, and sugar to set the taste.
  4. Place rice on the center of a bowl and pour curry around the rice. Enjoy!
