Happy National Peanut Butter Lover’s Day!

I bet a lot of you thought about I’d start talking about peanut butter cookies or PB & J, but did you know, peanut butter can be savory! The light to be spotted today is peanut noodle!

I like peanuts noodles from Thai cuisine. Creamy and tansy flavored sauce goes great with silky cold noodles and is perfect for summer lunch. When I was working in LA, a Thai restaurant was located right next to the building, so I became a regular customer there and particularly got peanuts noodle. I sometimes tried to peek at the kitchen to steal the method of how to make them, but of course, popular restaurants know those people exist and did a great job to avoid them, so I never could get the idea of how to make them but had a vague idea of mashing peanuts thoroughly and mix with Thai herb that were difficult to get.  

After moving to Seattle, my memory of the taste vividly came back and wanted to taste them again. I googled the store to remember what were ingredients, for toppings and learned the store closed a while ago but found a similar dish’s recipe. Wow, they actually make the sauce from peanut butter and most of the ingredients were already on my fridge! So what am I waiting for? Now is the time to try cooking on my own! 

 

<Today’s Recipe>

Peanut Noodle

<Ingredients>

  • 2 bundles soba noodle
  • ½ medium cucumber – shredded
  • 2 radishes – thinly sliced
  • ½ medium carrot – finely shredded

Sauce

  • 1 packet (32g) of peanut butter
  • 2 tablespoon soy sauce
  • 1 teaspoon minced ginger
  • ½ lime for juice
  • 3 tablespoon water
  • Tablespoon sesame oil

Topping

  • Some chili powder
  • 1 bunch scallion – chopped

<Directions>

  1. Fill water in a pan and bring it to boil. Add soba noodle and cook until noodle is soft. drain and rinse with cold running water.
  2. Mix all ingredients for sauce and set aside.
  3. Transfer noodle in a mixing bowl. Add cucumber, radish, carrots, soba noodle and pour sauce. Toss well and place noodle on a plate. Sprinkle scallion and chili powder and serve.

Umm, really, what was I waiting for? I’m sure this dish will be my regular on my dining table!
