Happy International Women’s Day! Did you know, today is it and this year’s theme is “choose to challenge.”
So are you on some challenge in terms of your eating habits? While it’s about eating, some people come up with losing weight, stay healthy, balanced diet, or to support their local, they challenge themselves to choose food that was locally grown.
I am also on my challenge to stay on a plant based, healthy diet. But, sometimes we only care about eating veggies and forget about intaking protein. It’s one of the typical fails for people just started to be on a vegetarian diet. So, today I’d like to share the recipe by using lentil: the source of great protein, Vitamin B and iron! I talked about my Dr visit a while ago and let me repeat that: we need protein to make iron to avoid anemia. Lentils are known as nutritious food for especially women, so let’s spot a light for lentils today to stay healthy, proud of being women!
- 1 cup cooked lentil
- ½ medium carrot – finely chopped
- 1 tablespoon onion – finely chopped
- ½ lime for juice
- 1 tablespoon olive oil
- Some parsley
- Some cumin powder
- Some salt to taste
Toss all ingredients together in a mixing bowl and serve!

Whatever your challenge is, you gotta keep it up! But don’t forget to stay healthy because as long as the energetic, healthy body you get, the nearer your goal is;)
