Nutty Coffee Oatmeal Cookie

Daylight saving has started. That means we lost 1 hour somewhere we don’t know. Sure, it’s just 1 hour but some people would notice your body is having trouble adjusting. Think about it, 1 extra hour to sleep: it means a lot, right? 

I know a lot of people would suffer from having a sleepy head at least this week, so I’ll share the recipe to fight it while enjoying yummy breakfast/snack/brunch! When you open the oven, you’ll feel aroma just like when you opened the door of your favorite cafe!

Nutty Coffee Oatmeal Cookie

*Makes about 4 medium cookies

  • 70g oatmeal
  • 2 tablespoons all purpose flour
  • 1.5 tablespoons sugar
  • 1 pinch salt
  • 2 tablespoons veg oil
  • 2 tablespoons almond milk
  • 1 teaspoon instant coffee
  • 1 tablespoon walnut


  1. Preheat an oven to 350°F.
  2. Mix oatmeal, flour, sugar, salt together and mix well.
  3. Add oil and mix well.
  4. Add walnut, chocolate, milk together and mix well.
  5. Spread parchment paper and place dough. Shape them round and bake them in the oven for about 15 ~ 20 min.

Mmm, the aroma of coffee with crunchy nuts and oats is taking me to heaven! Oh, watch out, it may be taking you into a dream while your boss is watching you!
