Green Beans Ponzu Salad

Do you like cooking green beans? I love it because green beans, especially the fresh one keeps crispy texture even after boiling them. When they are on sale, a lot of people gather around the box and they choose the right one quite seriously. 

When you get nice fresh green beans, how do you like them to be cooked? With garlic? Or as a casserole that your mom made for you when you were child? I usually stir fry them with garlic, the simple yet gorgeous in flavor, but this time let’s pair them up with my homemade ponzu(citrus flavored soy) sauce!

Green Beans Ponzu Sauce

<Ingredients>

  • 1 hand green beans – trimmed and sliced about 2 inches long
  • ½ carrot – shredded
  • Some sesame seeds
  • Some bonito flakes

Ponzu sauce

  • ½ lime for juice
  • ¼ cup soy sauce
  • ¼ teaspoon bonito soup stock

 

<Directions>

  1. Fill water in a pot and bring it to boil. Add green beans and cook until they are crispy yet soft. Drain.
  2. Combine all ingredients for ponzu sauce and mix well. Set aside.
  3. Combine green beans, carrots, ponzu sauce together and toss well. Sprinkle some sesame seeds and bonito flakes. Enjoy!

<Cooking Tips>

  • This recipe’s key is how you make the green beans nice and crispy. To avoid overcook them, don’t go check laundry or try to have a little break because they usually take longer than you think. Be a good mom/dad;)
