Cheesy Egg Salad Sandwich

Happy post Easter! 

I bet a lot of people enjoyed egg hunting, and what you have now? A plenty of boiled eggs! When I was a kid, I ate boiled eggs with just a sprinkle of salt. But as I grow up, I get an ability to turn them into a gorgeous food! Yay! 

Creamy egg salad on sandwiches is an irresistible breakfast/lunch item that doesn’t need a lot of preparation time/method, so let’s enjoy both cooking and eating with leftover-makeover!!

 

<Today’s Recipe>

Cheesy Egg Salad Sandwich

<Ingredients>

  • 2 large eggs – boiled
  • ¼ lime for juice
  • ½ jalapeno – finely chopped
  • ¼ medium carrot – finely chopped
  • 1 tablespoon mayo
  • Some black pepper
  • 4 sandwich bread
  • 2 sliced cheese

 

<Directions>

  1. Place sliced cheese on a sandwich bread and toast them.
  2. While bread is toasted, mash boiled eggs in a bowl. Add lime juice, jalapeno, carrot, mayo, black pepper and mix well.
  3. Remove bread from an oven/toaster and place egg salad. Enjoy!

<Cooking Tips>

Mash eggs according to your preference! If you like them to keep chunks, just stab eggs a few times and mix with other ingredients. If you like them to be smooth, food processor is handy!

Mmm, loaded egg salad is what makes my heart cheer up! I think my day starts well and goes well as long as I eat my egg salad sandwich for breakfast:D

    The idea of adding cheese and jalapeños to egg salad takes your recipe to a very grown up level. I’ll bet this would be excellent on crackers and served as an appetizer with a martini.
