Mediterranean Bruschetta

When you get some baguette, how do you eat?


With vinegar and oil? Yes, the classic! 

Sandwich? Well, I love it but I always wonder what to put between them to keep on a vegetarian diet. 

Rusk? Hmm, should I buy again a big bag of chocolate that must be hidden from my dinner buddy?


Or how about…bruschetta? Crunchy baguette with fresh veggies is a good combination and looks fancy for the beautiful open faced style! Want to make your dinner table gorgeous? Let’s cook some in Mediterranean style!

Mediterranean Bruschetta

  • 8 slices baguette
  • Some hummus

Veg Topping

  • 1 medium roma tomato – chopped
  • ¼ cucumber – chopped
  • 1 thin slice of red onion – finely chopped
  • ⅓ lime for juice
  • 1 tablespoon olive oil
  • 1 tablespoon parsley – chopped



  1. Toast baguette (if you prefer soft bread you can skip this step)
  2. Mix all ingredients for veg topping and set aside.
  3. Spread hummus on baguette and place veg toppings. Sprinkle parsley and enjoy!
