Okra and Tomato Okaka Soba

It’s getting hotter and hotter, so I need something refreshing to feel the summer’s footsteps coming to me! Since soba is easy to cook, how about cold noodles! Some people don’t like bonito flakes saying it’s like cat food, but did you know, that means cats are foodies too! 

If I combine the noodles with bright green okra and vivid red tomatoes with white and yellow boiled egg, the bowl can entertain my eyes while eating too!

Okra and Tomato Okaka Soba

  1. Fill water in a pan and bring it to boil. Add soba noodles and cook until they are soft.
  2. Put salt on okra and roll on the cutting board to remove the pricking hair. Drain and steam/boil. Drain and slice thinly. Set aside.
  3. Combine okra, tomato, bonito flakes, soy sauce, and ginger in a bowl and mix well.
  4. Add soba noodles and mix well.
  5. Transfer soba and veggies to a bowl. Sprinkle scallion, chili powder and place the half egg  on the top. Enjoy!

Here’s a little Japanese lesson for foodies. We call a mix of bonito flakes and soy sauce “Okaka” and it’s used in rice ball seasoning, cold tofu salad, or raw egg bowl! What, you never eat raw egg? You’ll see it everywhere when you visit Japan! It’s actually a super popular Japanese breakfast menu!
