Cherry Pancake

Happy National Junk Food Day! Did you know, today 7/21 is the day to spot a light for the food called “junk food” but actually brings joy to eating! 

So, junk food…Can you list some examples? When I took a moment to think about it, I only had an idea of sweet or salty food that brings guilty pleasure to us. Sure, they are high in calories and unhealthy if we continue to eat them regularly, but they are yum, TBH! Balancing them is important, don’t blame too much about food. Sometimes they bring a smile on our face too! 

So junk food…I chose pancakes for today’s recipe. I didn’t know they actually fall into the junk food category, but some people consider it because of sweet pancake syrups. With a little resistance from me, I made cherry syrup from scratch, and made it an excuse to enjoy my junk yet guilty pleasure food: Pancakes!

Cherry Pancake

<Ingredients>

Cherry Syrup

  • 200g red cherry
  • ½ cup water
  • 1 tablespoon each of cornstarch and water

 

<Directions>

  1. Mix sugar, oil, almond milk and cherry together in a mixing bowl.
  2. Add flour, baking powder and mix them for 10 times at the maximum. *don’t touch them further otherwise your dough gets hard and your pancake becomes like a frisbee.
  3. Spread olive oil in a pan and bring it to medium low heat.
  4. Pour dough and when it gets holes in the surface, flip them to bake the other side. Keep the direction 3&4.
  5. While baking pancakes, combine cherry and water together and mash the cherry.
  6. When it looks perfectly mixed, add cornstarch mixture and mix well. Remove from heat.
  7. Stack pancakes and spread sauce. Enjoy!

Again, the key to make your pancake fluffy is don’t touch dough more than 10 times. The time you touch the dough increases, the harder the pancake comes out.   

 

Also let me emphasize, the balance is important in everything we do. Don’t blame junk food or you choosing to eat them too much. You can always go back to a healthy eating habit. Until then, enjoy guilty pleasure with your favorite “junk” food;)
