Asian Colorful Coleslaw

I made another coleslaw with my favorite Asian cuisine style: Thai! Even though we are the same Asian, their way of cooking teaches me a lot of things to find another way to enjoy the food. Traditional Japanese food doesn’t use spices/herbs that much, but the Thai dish uses a variety of herbs and spices to make the food flavorful. 

When I made coleslaw, the dressing must have been mayo until I knew peanut sauce can be made with peanut butter. Now I have a last packet of peanut butter so let’s cook yummy coleslaw and enjoy the very last bite of it!

Asian Colorful Coleslaw

<Ingredients>

  • ¼ red cabbage – finely shredded
  • ¼ green cabbage – finely shredded
  • ½ medium carrot – shredded
  • 3~5 jalapeno pickles – chopped
  • 3 tablespoons corn
  • 1 hand edamame
  • 1 bunch scallion – chopped
  • 1 hand almond

Dressing

  • 1 1.15oz packet peanuts butter
  • 3 tablespoon olive oil
  • 2 tablespoon water
  • 1 tablespoon vinegar
  • 1 teaspoon sriracha
  • 2 teaspoon soy sauce
  • ½ lime for juice
  • Some garlic powder
  • Salt and pepper

<Directions>

  1. Mix all ingredients for sauce together in a mixing bowl. Set aside.
  2. Toss veggies together in another mixing bowl when everything mixed evenly, pour sauce and toss well.
  3. Transfer the salad in the plate and garnish with lime. Enjoy!

Mmm, amazing! I don’t usually put nuts in my salad, but a little chopped almond gives a unique crunchy texture and this entertains my mouth while eating! When I visited my friend from SouthEast Asia, her mom was cooking peanut sauce but she was making them from scratch, so I never imagined peanut butter can be this handy! Thank you, those who manufactures yummy food that can be straightly into our mouth, otherwise my kitchen got too many equipment to cook a single meal><
