Happy National Trail Mix Day! Did you know, today 8/31 is the day to appreciate our go-to snack when we are on hiking trails!
I’m a hiking lover, so almost every weekend I bring some nuts for snacks. As you can imagine, I also enjoy trail mix at home too and I sometimes notice I only got a handful right before we are heading to the trail, but this time I’m getting ready to make my hiking a level above by creating a special trail mix with kinako!
Kinako is a traditional, popular ingredient in Japan especially after new year. People eat mochi rice cake with sprinkling kinako all over mochi and they have huge fans from all generations. Since kinako is a healthy ingredient, they started to be spotted a light, but they don’t have much variety since kinako mochi is too popular.
Now, I don’t have easy access to mochi so I need to find a way to enjoy kinako with some food that’s easily accessible in the US grocery stores. And light bulbs when I saw abandoned walnuts from my picky dinner buddy whose hobby is opening the bag of mixed nuts and dividing them by the kind AND remake his own original assorted nuts. Walnuts are easy to get from the US grocery and muchiable. Let’s combine them and make a snacky snack!
Crunchy Brown Sugar Kinako Nuts
- 100g walnuts
- 2 tablespoon brown sugar
- 1 tablespoon water
- 2 tablespoon Kinako (roasted soybean flour)
- Put walnuts in a small pan and bring it to medium high heat to roast the nuts.
- In another small pan, combine brown sugar and water together and bring it to medium high heat. Wait until it gets boiled.
- Transfer walnuts in the brown sugar syrup pan and stir well to evenly coat the syrup.
- Sprinkle kinako and toss well.
It’s so tempting to pop them in the mouth after tossing nuts with kinako, but it’s important to cool them down since hot syrup is extremely harsh on our delicate mouth. The challenge time has come…Can you be patient?
