Happy National Tofu Day! Did you know, today 9/1 is the day for our vegetarian savior of protein intake: tofu!
Hmm, I think American make everything big, so tofu is also big in the US. Whenever I cook tofu hamburg, there is always leftover so this is my typical next-day-lunch!
When I was a perfect example of carnivore, I always complained whenever there’s tofu in my patties saying “low calorie” or “healthy.” But now, I’m on a vegetarian diet and probably eat meat once in several months. Under this diet, tofu is a very good source of protein and I love tofu patties with a lighter flavor with refreshing after taste than meat patties, so I’m glad I could have my life with tofu!
As I like my Asian inspired patti in Asian flavor, the sauce is of course Asian too: Teriyaki!
To make it colorful and interesting in texture, I put a lot of healthy additives in my patties so it’s definitely satisfying even if you are famished!

Tofu Patti Sando
<Ingredients>

- ½ pack tofu
- 1 hand edamame – steamed and removed from the shell
- ¼ onion – chopped
- ½ medium carrot – chopped
- ¼ jalapeno – chopped
- 1 tablespoon olive oil
- Some garlic powder
- ½ cube veg soup stock
- Some salt and pepper
- 1 tablespoon bread crumbs
- Some cornstarch
- Some olive oil
Sauce
- 3 tablespoons soy sauce
- 3 tablespoons cooking wine
- 1 tablespoon sugar
- Some ginger – shredded
Toppings
- 4 slices sandwich bread
- ⅛ red cabbage – finely shredded
- ½ medium carrot – shredded
- ⅛ onion – finely shredded
- Some slice of tomato
- Some mayo and mustard
<Directions>
- Pour olive oil in a small pan and cook onion, carrot, jalapeno. Set aside.
- Drain tofu and mash. Mix with cooked vegetables and edamame. Sprinkle garlic powder, veg soup stock, panko crumbs, salt and pepper. Make several small patties with tofu.
- Pour olive oil in a pan, about 2 tablespoons and cook tofu. Occasionally flip the tofu.
- Combine all ingredients for sauce and bring it to medium high heat in another pan. Add tofu to coat sauce evenly and set aside.
- Toast bread until it gets tanned.
- Spread mayo and mustard, put veggies, tofu patties, close the face and cut into your favorite way. Enjoy!
Mmm, thank you tofu, being in my life! Fluffy tofu with rich soy flavor is already good, but with my teriyaki sauce, the taste got rich and popular with my dinner buddy!
<Tips to Store the Leftover Tofu>
Soak in water and change water everyday! If you forget to change it, the tofu makes the turbo go wrong…with this method, tofu could be fresh for more than a week!
