Mediterranean Chopped Salad

A few weeks ago I introduced baked falafel but didn’t talk about salad that time. It was delish so I wanted to write about this today.

 

I think to make a meal, there’s always fresh salad on a dining table with a variety of vegetables. Fresh vegetables are a rich source of vitamins, fiber, minerals etc to make our eating habits balanced.

Mediterranean Chopped Salad

<Ingredients>

  • 1 large stalk celery – chopped
  • 1 medium carrot – chopped
  • 3~5 black olives – sliced or chopped
  • 3~5 tablespoon canned corns – rained
  • 3 tablespoons crumbled feta cheese
  • Some parsley – chopped
  • 1 tablespoon olive oil
  • ½ small lime for juice
  • Some black pepper

 

<Directions>

Combine them all in a mixing ball and serve. 

 

<Cooking Tips>

After washing veggies, be sure to dry well. You can either do pat dry by using paper towels or use salad spinner (This is what I use.) If there is excessive water, the salad gets ruined for sogginess. 

 

Mmm, feta cheese has such a great accent on the whole flavor. I got to know feta cheese after I came to the US, and regret how I didn’t meet them sooner. Someday I’d visit Greece and try made in Greece feta. I wonder if they taste different than the one in the US:)

    It’s my wife’s favorite salad, and after our recent Greece trip, we make it specifically as they do, with Feta, cucumber, tomato and raw onion, with kalamata olives and lemon juice and olive oil….love it! Dried oregano as well!
