Happy National White Chocolate Day!
Did you know, today 9/22 is the day to enjoy white chocolate!
So I have a confession to make. Even though today’s the celebration day for white chocolate, I’m making treat of the day by using leftover.
My picky eater dinner buddy abandoned white chocolate chips from a mixed nuts pack and it got piled up like a mountain now. I don’t know why he doesn’t like white chocolate, but when I see the treasure mountain on my own eyes, I honestly think I’m such a lucky person to get married with the guy like him because that treasure will be all mine!
Now let’s melt them(not my heart, chocolate) and turn them into yummy snacks!
Some people said white chocolate isn’t really chocolate for lacking cacao %, but it’s ok because it’s yummy and I like it:D
I usually pair chocolate with walnuts, but this time I got some pumpkin seeds too, so they are a little more colorful than my usual snack!
Ready for cooking? Here we go!
Nutty White Chocolate Rusk

- Some baguette
- 3 tablespoons white chocolate chips
- ½ teaspoons almond milk
- 3 tablespoons pumpkin seeds
- Toast baguette until they are crunchy.
- Roast pumpkin seeds in a pan. Set aside.
- Melt yogurt chips by warming up the bowl in warm water. When it starts to melt, add almond milk to make it nice and creamy.
- Remove baguette from heat and spread melted yogurt chips on baguette.
- Sprinkle pumpkin seeds and let it cool until the spread is set.
Use leftover, hard baguette works just fine! Or I prefer to use leftovers because the crunchiness is just perfect that only leftovers can get!
If you are about to use chocolate chunks instead of chocolate chips, shave them or chop them finely to get perfectly smooth melt-in-your-mouth texture.
Mmm, pumpkin seeds give a nice crunchy texture and this goes well with white chocolate! I usually eat milk chocolate but white chocolate taste sweeter, so this is the perfect snack for those who got sweet tooth:D
