Daikon.
Did you know, they are sometimes compared with ladies’ legs because they have beautiful snow-white color and look like a human calf with the perfect curb reaching to the ground. But, be careful if you wanna use it to attract Japanese women. Japanese Daikon radishes are big. If someone says you have daikon-like legs, that means you are telling her she is fat. No matter how well you managed to go on a date, the expression is the death sentence to the relationship.
So anyway, daikon radish is a good vegetable. We can eat them simmered, baked, raw, or even they can be garnished to decorate the food fancy. I wanted to make some refreshing side dish with limited ingredients, so let’s make some salad with my homemade sauce: ponzu!

Daikon Radish Salad Ponzu Sauce
<Ingredients>

- 2 inch length Daikon Radish – shredded
- 1 medium carrot – shredded
- 1 bunch scallion
Ponzu Sauce
- 1 tablespoon soy sauce
- ½ lime for juice
- ¼ teaspoon bonito soup stock
<Directions>
- Toss daikon radish, carrot and scallion together well.
- Mix all ingredients for sauce and set aside.
- Pour the sauce over the veggies and mix well. Enjoy!
Mmm, good! I love ponzu but it can be very expensive to buy them, so homemade is the best! You can adjust tangy level, or to make it spicy by adding little cayenne too! We usually use ponzu for hot pot sauce, but it can go great as salad dressing, as you can see from the recipe!

That sounds very delicious! 😋👍 I wonder whether I could also use fish sauce instead of Bonito stock. Daikon can be found at my favorite vegetable seller’s shop but I don’t think I’d be able to find Bonito stock here… 🤔

Hi Livia, oh you don’t see bonito stocks? Hmm, I think fish sauce and bonito stock has a different flavor. While fish sauce has more like intense salty flavor from fermented process, I’d say bonito stock is lighter flavor into it.
But you know what Livia, you just inspired me to think about dressing by using fish sauce😆 Since I’m new to fish sauce I only use them when I make som tam, which is once or twice a year due to lack of access to green papaya😂

We have around 50 different brands of fish, oyster or also shrimp sauce available here. I guess I’ll ask my vendor about which one is the “softest” one. Maybe I can then try it with that. 😊👍

I did not realise ponzu sauce only had 3 ingredients!!!! and I love it!
I have half a daikon in my fridge … guess I will have to make this salad!
