Spicy Cucumber Salad

I have built up a repertoire of cucumber recipes. Now I have several ways to enjoy refreshing cucumber, but I tend to make my cucumber zesty. While the sour, pickled flavor of cucumber is good, I’d like to expand how to season them. So today’s recipe is of course cucumber, but something different; it’s hot!

This small salad is great with soba or rice dishes, so remember you just got a good idea to pair up with them!

    Cucumber is very under-rated and certainly under-utilized in American cooking…this is a terrific recipe!

        And that seems to be the only way anyone utilizes them – I marinate them for our Bibimbop bowls, use on Tuna sandwiches as well!

        I was lucky enough to go to Seoul for work a few years ago and stayed 6 days – it was the greatest culinary experience! Well, I have also been to Tokyo five times and that is magic.
