Tofu Lettuce Wrap

Do you know what’s in your fridge at this moment? Are you sure nothing is hiding behind it? 

Well you gotta check it now, sometimes abandoned vegetables or dairy, protein can inspire you for yummy recipes! 

 

Speaking about leftover cooking, I need to pay close attention to tofu whenever I get them. Even though tofu and Japanese cooking have a close relationship, it’s getting harder and harder to finish them in a single meal. 

 

The first point I can think of is the size of Tofu. I usually buy 1lb of them, the most popular size in the US(well at least in my neighborhood) and almost always I get leftovers that need to be used up within a week.

 

The second point is that we’re sharing it with just the two of us. My family consisted of 2 adults and 2 foodie kids whose MPG was like 2 hrs per a full meal. Now I’m still a foodie and my husband loves tofu too, but 1lb of tofu is still too much for us in a single meal. 

 

So to enjoy tofu with still fresh and great quality, I made some savory topping by crushing them. I ran out of rice paper so this time was more easily accessible, plant based, wrap: Lettuce!

Tofu Lettuce Wrap

<Ingredients>

  • ½ pack of tofu – crushed
  • ½ onion – finely chopped
  • 1 medium carrot – finely chopped
  • 1 jalapeno – trimmed and chopped
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 teaspoon ginger
  • 1 teaspoon chili garlic paste
  • 1 tablespoon soy sauce
  • 1 tablespoon cooking wine
  • 1 teaspoon sugar
  • Some lettuce

 

<Directions>

  1. Pour olive oil in a pan and add garlic, ginger, and jalapeno. Bring it to medium high heat, and when you start to see bubbles around aromatic ingredients, add carrot and onion. Cook for about 5 min.
  2. Add tofu and mix well.
  3. Pour condiments and mix well. Cook until the liquid is absorbed.
  4. Remove from heat and transfer the tofu into a bowl. Prepare lettuce and wrap the tofu mixture with them. Enjoy!

 

<Cooking Tips>

The one you’re seeing in the pic is for photo shoot purposes, but whenever I cook the lettuce wrap, wrapping them isn’t in my cooking direction. So basically it’s build your own style that also adds home party vibes!

This way, everyone will learn “sharing spirits” and wrapping skills…guess who put too much filling and ends up having torn lettuce!

I used iceberg lettuce but you can of course use other types of lettuce too!(but I don’t recommend romaine lettuce…they have a robust spine!

Mmm, so good! Cooking with leftovers sometimes makes me feel guilty because I can predict my dinner buddy says ”oh, are we seeing tofu again?” But by making this Build Your Own Style, he can participate in preparing the yummy food, and it’s not a regular thing in my household, so hope you can enjoy it too!

    I went to an Asian restaurant years ago that had lettuce wraps on their appetizer menu, so I ordered it, pork or chicken were the choices, I chose chicken, I loved it so much I used to make it for dinner with a plate of vegetables, thanks for the reminder, I will have to make those again, they are so delicious. What does watermelon rind taste like?

      For watermelon rind, you’ll feel savory from soy sauce and a touch of sweet from sugar. The taste is rich so you only need a small amount of watermelon rind tsukudani, probably a couple of pinch with chopsticks is enough for a bowl of rice👍
