Spicy Eggplant Noodle

Would you like your noodles(I’m talking about Asian noodles, not pasta here) to be with soup or without soup?

 

I usually have a generous amount of soup with them because in that way I can get more water intake to stay hydrated, but sometimes I want to have soup-less noodles. 

 

I had some huge eggplant left and wanted my noodles to be spicy, so I combined them with my special mapo sauce made from scratch! 

 

Do you want some spicy noodles that never allow you to stop slurping?

<Ingredients>

<Directions>

  1. Pour sesame oil in a pan and add ginger, garlic to add aromatic flavor. Add eggplant, carrot, onion and cook until they are soft.
  2. Pour water, veg soup stock, toban djan, soy sauce, cooking wine, vinegar and bring it to boil.
  3. Cook noodles in another pot.
  4. When that tastes perfect, pour potato starch and water mixture to make it thick.
  5. Drain noodles, transfer them to a plate, in a ring shape. Pour veggie sauce on the center of the plate and sprinkle parsley. Enjoy!

<Cooking Tips>

Don’t overcook noodles. The soggy noodles can ruin the whole plate!

<Caution – don’t read while you’re eating>

I’m glad to live in the US where no one cares if I eat hot noodles or spicy food and blow my nose. In Japanese culture, blowing your nose is considered as an inappropriate thing whenever you’re in a public place. I guess it’s because blowing your nose sounds funny especially for children(like fart sound,) so people are afraid of making these sounds in a place. 

 

Now, probably you’d wonder what-if situation. Here is an answer. We just sniffle until they can run into a private space. Sometimes it’s just 3 min, but sometimes it could be long, like an hour. Some people would ask me why they didn’t ask to be excused, but yeah…we just stay at the place and keep sniffling. 

 

Some of my friends who grew up in other countries ask just saying “Excuse me” and do whatever you hesitate doing so is fine, but to me, I wonder how powerful the word is.

 

So those who live with the culture that don’t care about blowing their nose during meal time, enjoy eating my spicy eggplant noodle. For those who are like me, eat this in a private setting and tweet you’re having one of the best noodles. Cheers!
