Thai Fusion Sardine Bruschetta

Happy National Sardine Day! Did you know, today 11/24 is the day to entertain our taste buds with sardine! 

Well, I’m on a vegetarian diet, but let’s make it a cheat day since it’s a sin to skip the yummy food on this special day! So, here is another version of Sardine Bruschetta! 

My dinner buddy doesn’t like the smell of fish, and he was out for a meeting and didn’t need dinner. Can you guess what it means? Party time!! 

I was saving canned sardine for my emergency-now-I-need-to-eat-fish moment, and as long as my dinner buddy isn’t here today, this is the time, even though it’s not wildfire coming to my neighbor but perfectly sunny. 

Last time was Japanese fusion, so how about making it in Thai style? With a splash of lime juice and drops of fish sauce to enhance flavor, my fish bruschetta is a perfect food to make a single night party amazing! 

 

<Today’s Recipe>

Thai Fusion Sardine Bruschetta

<Ingredients>

  • 6 slices baguette
  • 1 can oil sardine
  • 1 teaspoon olive oil
  • 1 teaspoon fish sauce
  • ⅓ lime for juice
  • Some parsley – chopped
  • Some slice of lime for garnish

 

<Directions>

  1. Toast the baguette(You can skip this step if you like)
  2. Empty the can into a pan and bring it to medium high heat.
  3. Mash the sardine and pour fish sauce, splash lime juice and mix well.
  4. Place sardine on baguette and sprinkle parsley. Decorate with lime and enjoy!

Mmm, some people say sardines smell too intense, but no, they are just flavorful in the ocean! I’m glad to have a whole plate of it today, and wonder when I’ll have a single party night. It’s good to have someone sharing food everyday, but con is sometimes I have to give up eating my favorite food! Don’t you agree? Especially married people?;)

    I love sardines! A long time ago my bosses nurse used to cook sardines with tomatoes, onions, and peppers (I think) and she would serve it over steamed rice or fried rice and we would sit and have lunch every Saturday, the day I was there to clean the house. Such a delicious memory, thanks for reminding me of that.

    Love this! Sardines are an acquired taste for many, but they have a real pop that I love…the Actress Elizabeth Olsen made her favorite Sardine Sandwich for Kelly Clarkson, and she ate it live on her talk show…she said she really liked it but she also said she didn’t expect to!

    I Love sardines. I usually just have them on toast with some mustard on the toast and then grill them in the toaster oven .I will try your recipe for sure.

    Oh, that reminds me of my favorite „panino“ back in Italy 🤩 thanks a lot for sharing this recipe and reminding me 🤩 I probably won‘t be able to get sardines here, as I think they don’t like the warm waters of the Indian Ocean 😄 but luckily, some of my friends are fisherman and they will surely be able to recommend me an alternative to prepare your bruschetta here. 😊👍

      Oh I think you can definitely get canned one! I don’t get fish here either since my husband isn’t a big fan of seafood. Anyways I’m glad my post reminded you for such a sweet memory in Italy💚🤍❤️✨🇮🇹

        Unfortunately, they only have the cans with the sardines which are dumped in tomato sauce in the “affordable” supermarkets here. 😞 But I’m already thinking about grilling a fresh alternative before putting it onto the bruschetta 🤔💡that could be very nice 😊
