Hi there, are you still having a food coma from the Thanksgiving feast?
I think some of my Thanksgiving feast items are still in my stomach, but skipping meals is a big NO NO, so let’s cook something light!
When I went to an Italian restaurant with my college friends, we usually had calamari fries and enjoyed them a lot. But after graduation and I was the only one who stayed in the US, my lunch/dinner buddy also changed to my-date-who-later-become-my-husband. He isn’t a big fan of fried food or seafood except sushi, so this was the time I met bruschetta. I knew he wasn’t a big fan of fresh tomatoes so immediately after he ordered that, I thought that was for me. It turned out their bruschetta was so good and we both enjoyed them a lot(Now I’m glad we’re still in the stage of loving each other a lot, so when there was a last piece of bruschetta, all we said was “go ahead” “no you go ahead” instead of “you had more than me” “oh no, YOU did!”)
Thank god we’re still together and the bruschetta is an easy recipe, I can make them at home whenever we feel like them. It’s a refreshing appetizer consisting of crunchy baguette with tangy sweet tomato and aromatic basil, so it’s perfect little bites after Thanksgiving feast.

Tomato Basil Bruschetta
<Ingredients>

- 4 slices baguette
- 1 large tomato – chopped
- 1 hand basil – chopped
- 1 tablespoon olive oil
- Some salt and pepper
<Directions>
- Toast baguette.
- Mix all other ingredients together and set aside.
- Remove the baguette from the oven and place the veggies on the top. Enjoy!
<Cooking Tips>
If you’re in the team-crunchy-lover like me, toast the baguette to crispy golden brown! In that way you’d make a mess on your table when you bite into it, but it’s so heavenly the aroma of the wheaty crusty baguette!
Mmm, Italian classic yummy food! Now my stomach is revitalized, and I can see my hands are reaching for another one!

I just love tomato bruschetta! 😍 Do you like garlic? If you do, have you tried to “grate” a garlic clove on the toasted bread by rubbing over it before distributing the tomatoes on it? Normally, the bread’s surface works a bit like a grate 🤩👍

Oh really!? I’ve never done rubbing garlic clove on bread before. I love garlic bread but all I did was mixing grated garlic with butter, herbs and spread over it. I’ll try next time I make some bruschetta❤️
