Hot and Sour Noodle Soup

When I was a kid AKA growing so fast and quick physically and emotionally, I used to put noodles in soups. Just a bowl of soup as the main dish never happened in my cuisine but always considered as a side dish, I needed something filling to satisfy my always-chirping-for-more-food stomach. Can anyone understand me? 

 

As I got older, I learned soup as the main dish is actually comforting and filling with some side of bread, and adding some noodles less likely happened. But, sometimes my mind is in the middle of a Throwback Thursday mood, so yesterday I added some noodles in one of my favorite spicy soups: Hot and Sour Soup! 

 

I actually got to know hot and sour soup after I turned to the age of legally drinkable in the US, but its flavorful taste of comforting food made me crave for them.

Hot and Sour Noodle Soup

<Ingredients>

Soup

  • 1 tablespoon sesame oil
  • 1 clove garlic
  • 1 teaspoon ginger – shredded
  • 1 jalapeno – remove seeds and sliced
  • 1 medium carrot – sliced
  • 1 stalk celery – chopped
  • ¼ onion – sliced
  • 3~5 dried shiitake mushroom – soak in warm water and sliced(keep the water for later use)
  • 400ml water
  • ½ cup tofu – dice cut
  • 1.5 cube veg soup stock
  • 1 teaspoon soy sauce
  • Some salt and pepper
  • 1 tablespoon each of water and potato starch mixture
  • 1 large egg – beaten
  • 1 bunch scallion

 

<Direction>

  1. Put sesame oil, garlic, ginger, and jalapeno in a pot and bring it to medium high heat. When the aroma of herbs wafted, add carrot, celery, onion and cook for about 5 min.
  2. When the onion is golden brown, add shiitake mushroom with the water used for soaking and freshwater.
  3. When the liquid is boiled, add tofu, veg soup stock and soy sauce. Stir well.
  4. Reduce the heat and sprinkle some salt and pepper to set the taste.
  5. Pour water and potato starch mixture to make the soup thick.
  6. Fill water in a pan and bring it to boil. Add egg noodles and cook until they are soft.
  7. Drain and transfer them in a bowl.
  8. Add beaten egg to the soup and stir well.
  9. Pour over the noodles and sprinkle scallion. Enjoy!

 

<Cooking Tips>

Act quick when you reach directions 7. As much as you take more time to get the things all together, the noodles get soggy.

    The Hot and Sour soup sounds wonderful, I think that will be a New Year’s menu item, I love Japanese and Chinese soups so flavorful and warming.

        On New Years Eve the menu is your hot and sour soup with some PF Chang’s egg rolls, and on New Years day dinner will be tempura shrimp and Yakisoba noodles happy food for a happy new year 😊

    Another terrific recipe! Any sort of protein can add a different kick as well, but perfect as is right now as well!

      Hi John, thank you for commenting! True, my doctor told me vegetarian diet are easy to lack protein, so your comment is a great reminder TBH🤣 Maybe I’d put tofu, but on cheat day even seafood seems a good idea to add a kick!👍💕✨

        Hi Leah!! Wow thank you for thinking about me! Yes I found them the other day but Trader Joe’s did such a waaay better job than what I imagined. They released a big pounder bar with caramel and pretzel, and now I can’t live without them🤣🤣🤣
