Happy National Cookie Exchange Day! Did you know, today 12/22 is the day to exchange our favorite types of cookies to taste all kinds of them!

 

Hmm, as the baking season hits in our calendar, there are so many cookie related national food holidays. As cookies are so versatile to add favorite flavor or additions like nuts, dried fruits, spices, so the day like today is when we can enjoy cookies having a heated debate of which flavor is the best(I doubt anyone can settle in for just a single answer though.)

 

So anyways, today’s my cookies are classic, very staple in your kitchen since we’re just a kid. I remember munching them while I was doing homework (well a little lie here…playing video games!) or sometimes tried eating by removing the cookie and jam part just like how people eat oreo (I bet it sounds familiar to you!)

 

Today’s my cookie is such a sweet little treat so let’s enjoy baking and munching!

<Ingredients>

<Directions>

  1. Combine butter, sugar, egg, flour and cornstarch together in a mixing bowl. Mix them together until they become 1 big ball. 
  2. Transfer the dough in a container and let it rest in a fridge for about 30 min.
  3. Preheat the oven to 375°F.
  4. Spread parchment sheet on a baking pan.
  5. Remove the dough from the fridge and make small balls.
  6. Press the center of the ball and prepare for the spot to put jams.
  7. On the dent, gently place the jam/preserve.
  8. Transfer the dough in the oven and bake it for about 15 min.

 

<Cooking Tips>

Transfer your jam/preserves/jelly in a small container and stir well before placing them on cookie dough. Jam/jelly/preserves that got straight from a jar are firm. You’d end up putting more than you think and see a heart breaking scene when you open the oven.

Mmm,  after baking the jam gets hard and the chewy textured jam on soft cookies is so good!

    One of my favorite cookies to make is peanut butter cookies. But I like to use cookie cutters on them. I mash the peanut butter dough out on the cookie sheet and cut out the cookies. And I roll the dough back up and reuse it. The peanut butter cookies don’t really stick to the cutters. The recipe I use is flourless.

    I have done superhero cookies. Batman and Superman for a friend. But I have a Snowman cookie cutter, stars, and trees for Christmas.

    Those cookies look delicious! 😋👍 My favorite cookies come from the Swiss town of Basel and are called “Brunsli”. They are made from egg whites, almonds, chocolate, cocoa powder, cloves, some Kirsch and, of course, cinnamon 😉 I love them because they are crispy on the outside but soft inside. 🤩🤩🤩
