Creamy Cauliflower Risotto

Happy National Milk Day! Did you know, today’s the day to appreciate calcium-packed drink, milk! 

 

Well well well, I’m on a plant based diet so not using real milk in today’s recipe…but we still call the liquid milk even though it’s not from the cow, so I hope today’s entry still counts as a celebration food to enjoy National Milk Day! 

 

Milk(in any form) is very versatile…we can make soup, drinks, risotto…the selection is countless! And today, a lot of people started to cut out their intake of carbs, so I’m on the trend of this fad today and made some risotto by using cauliflower!

Creamy Cauliflower Risotto

<Ingredients>

  • 1 jalapeno – minced
  • 1 medium cauliflower stems
  • ¼ onion – minced
  • 1 medium carrot – minced
  • 1 tablespoon olive oil
  • ½ cup oat milk
  • 2 hands shredded cheese(I used cheddar)
  • Some salt and pepper
  • Some parsley

 

<Directions>

  1. Place cauliflower stems in a food processor and process until they are finely chopped. Set aside.
  2. Pour olive oil in a pan and cook vegetables.
  3. Add milk, shredded cheese and mix well. Season with salt and pepper.
  4. Cook until the milk is nicely boiled up. Transfer the cauliflower and sprinkle some parsley. Enjoy!

 

<Cooking Tips>

I think you should serve it in a bowl…my risotto was a little too juicy and yummy so the plate got messy!

If you buy cauliflower rice like this from your local grocery, the cooking gets so easy and quick. I enjoyed it as my lunch the other day and it was perfectly filling.

Mmm,  so good! The milky broth mixed with cheese is what we all loves, so the flavor combo never disappoint you.

        I think it has to do with the style the rice is cooked in the risottos. 😉
        I usually cook it in my rice cooker and prefer that style.

        But there is actually ONE risotto which I always loved and that‘s when my dad cooks his tomato porcini risotto over the campfire.
        But THAT is one VERY PARTICULAR risotto 😁👍

        We always prepared this on the national holiday of Switzerland, the 1st of August, when we celebrated with our friends. Probably it was also the whole campfire atmosphere which also made the risotto taste so special 😉
