Scrambled Egg Bruschetta

Good morning, everyone! Have you had breakfast yet? We’re in the middle of Feb, and that means it’s National Hot Breakfast Month!

Even though a full breakfast sounds/looks great, we’re sometimes running out of time, so let’s stack them and make a quick, easy to gobble up food! 

 

As for breakfast, recommended items are…

  • Eggs
  • Bread
  • Salad
  • Potatoes

If I spread all those, the biggest plate in my house gets full, but making an open sandwich can make them neat and as an eater, you really don’t need a fork and knife. So convenient that everyone can smile!

Scrambled Egg Bruschetta

<Ingredients>

<Directions>

  1. Toast baguette
  2. Mix cabbages, carrots with Italian salad dressing. Set aside.
  3. Mix egg, parmesan cheese, and almond milk well.
  4. Pour olive oil in a pan and cook the egg. Sprinkle some salt and pepper and stir the egg to make it scrambled.
  5. Place cabbages on the baguette, eggs, jalapeno pickles and decorate with ketchup. Enjoy!

 

<Cooking Tips>

Be creative when you put ketchup. You gotta write heart shape or LOVE on your food with ketchup to feel romantic vibes, or smily face for your kids to enjoy meal time!

Hehe, someone can feel I’m in a hurry! Instead of spreading each item of breakfast, I stack them to make quick and easy to eat food today. I usually don’t buy ready-made dressing(only ranch) but my father in law gave it to us so we poured it over vegetables. Sometimes using store-bought dressing is good, especially when we’re in a hurry or a little tired from everyday life.

      Thank you! So you’re on vegetarian diet of not eating dairy too? I try to be plant based diet as much as possible, but for baking sometimes eggs are so so so required🤣 There are some vegetarian/vegan sweets in my blog and am going to show you some later, so please stay tuned💕📸

    Breakfast should be the best meal of the day. As someone once said ‘eat breakfast like a king, lunch like a prince and dinner like a pauper’ which sounds like the perfect life to me. If I ever get to live it, I’ll come to you for some ideas!

      Yes please! And I know that quote too😊 But I bet a lot of people prefer extra time to be in warm bed rather than big feast time right after waking up🤣 Especially after surprisingly heavy snow happened in Tokyo you know what I mean, right?😜👍
