Happy National Pancake Day AND Peanut Butter Lover’s Day! Attention all breakfast lovers/pancake lovers/Peanut butter lovers, today is a big day!
As long as multiple food holidays fall on the same day, I should combine these ingredients for today’s food and celebrate the fun food holidays!
But I usually don’t use peanut butter in my pancakes…Peanut butter is reserved for making PB & J that both my dinner buddy and I enjoy for our breakfast, brunch, or lunch. Their creamy rich flavor fills our stomach quickly and leaves a pleasant feeling of being full. But “never tried” means “the first time is waiting for you,” so let’s try a new thing!
When there is pancake, I want to add some fruits to accompany it so I chose bananas, the popular fruits for pancakes!

Peanut Butter and Caramelized Banana Pancake
<Ingredients>

Pancake
- 60g sugar
- ½ medium banana – mashed
- 2 tablespoon creamy peanut butter
- 110ml water
- 160g all purpose flour
- 1 teaspoon baking powder
- 1 tablespoon olive oil
Caramelized banana
Peanut Butter Sauce
- 1 tablespoon peanut butter
- ½ teaspoon maple syrup
- ¼ cup water
Optional
- Crushed peanuts or walnuts
- Some coconuts flakes
<Directions>
- Prepare pancake – combine sugar, banana, and peanut butter in a mixing bowl.
- Combine flour, baking powder, water, peanut butter mixture in a bowl and mix but don’t knead. Set aside.
- Pour olive oil in a pan and start making pancakes.
- While making pancakes, prepare sauce. Combine all ingredients for sauce together and mix well. Set aside.
- Make Caramelized Banana – Sprinkle sugar on bananas and broil until the caramel is set.
- Decorate pancakes and pour the sauce. Enjoy!
<Cooking Tips>
- For caramelized bananas, I’m lucky to have a kitchen torch from Jo Chef so I could make them easily. But I know this is a fancy kitchen tool so if you don’t have one, just combine 2 tablespoon sugar and 1 tablespoon water in a pan and make caramel. When you see the sugar is getting color, remove from heat and add banana. Coat the syrup and set aside. Handling ripe bananas can be hard to deal with how soft they are, so I recommend using not so ripe bananas but young, almost-still-green ones.
Mmm, creamy rich! This is the perfect peanut lover’s special pancake. In every bite your taste buds and nostrils feel the sweet aromatic peanut butter bursting, and crunchy outside creamy mellow inside bananas are boosting up the whole flavor.

He always prefers lighter meals and is not a big fan of peanut butter, except it’s PB & J. Right after he gave a glance at the pancake, he was like “wow!” I know…because the presentation looks gorgeous. But while he proceeded to eat the pancake(rich) with peanut butter sauce(also rich) and caramelized banana(yes, rich), he started to say it’s too much for him. I had a smaller portion of them, but I’m OK with peanut butter so I could finish them without any problem…I was full until next day though. So thinking about it, maybe this food isn’t for everyone, so do check if your meal buddy is a peanut butter lover.
A final note–he said it’s too much for him, but he finished his big portion way faster than me.
I’d recommend it for peanut butter lovers, or those who need high calorie energy shot right before triathlon or similar sports.

Strangely, I have a strong aversion to dry food…cakes, pancakes, cookies don’t interest me, I like wet food….however, the addition of peanut butter here just may do the trick! Great recipes as always!
