Apricot Boba Milk Tea

Happy National Tapioca Day! Did you know, today 6/28 is the day to enjoy tapioca!

 

I learned about tapioca after I moved to the US. One of my friends took me to Taiwanese cafe and it was my first time to try a glass of boba milk tea. At first I felt weird because slurping up big tapioca pearls with huge straw was my first experience I ever had. When I was a kid, I used to eat orange juice that had tiny orange pulps in it and loved it, but well…the size was totally different! But as a big foodie spirit inside me didn’t abandon the remaining milk tea with boba, and surprisingly enough, I went back to that cafe a few days after because the boba milk tea was so addictive after all. 

 

I like to make mine with Earl Grey, but I found almost gone apricot jam hidden in the back of the fridge, so let’s make some fruity flavored boba milk tea this time.

Apricot Boba Milk Tea

<Ingredients>

<Directions>

  1. Brew tea. Let it sit for a while to cool.
  2. Combine some water and tapioca pearls in a saucepan and bring it to high heat. When it’s boiled , reduce the heat to medium low and let it sit for 15 min or until the tapioca texture is soft and chewy.
  3. Add tapioca pearls into a glass and pour apricot tea. Add apricot jam and stir well.
  4. Add some ice cubes and enjoy!

 

<Cooking Tips>

I like the brand called Ahmad Tea because its flavor is richer than other brands (their peach and passion fruit is the best.) But as always, you can brew your tea with your favorite tea brand!

 

<Product Memo: Boba in a Glass Jar>

I used this tapioca pearls in a glass jar like the pic above because I didn’t want too many of them. Since it’s in a glass jar, I thought these tapioca pearls are already soft and chewy. But no…when I slurp up the tapioca pearls and sink my teeth into it, it resisted them and gave me the unpleasant texture like uncooked dumplings…After I researched about tapioca pearls, I realized I needed to boil it even if it’s jarred one…Who is like me, poking around new gadget without reading manuals? (But to justify myself, the jar didn’t say how to enjoy them. Well, for some lucky people who are familiar with tapioca pearls, they’d think it’s like “caution: it’s hot!” to freshly bought a cup of coffee? Haha!)

Mmm, good! Since I used fruit jam instead of sugar as a sweetener, the flavor is boosted and pleasant aftertaste spreads in your mouth!
