White Chocolate and Lemon Oat Cookies

Happy World Chocolate Day! Attention, all chocolate lovers, today is the day to gobble up chocolate of all the flavors! 

 

Do you have a favorite chocolate flavor? We usually have some blocks of milk chocolate in our snack time, but our favorite pocky is strawberry one with a freeze dried chunky strawberry on it. Dark chocolate is appreciated especially when we have hot chocolate, and caramel chocolate is an energy boost snack especially on a super busy day. 

 

But when it comes to white chocolate, it’s my ultimate favorite because I don’t have to share them with my dinner buddy. He thinks white chocolates are “OK” (wait, WHAT!?)  He collects white chocolate chips to a different container while he is eating mixed nuts, and when it is full, he brings it to a pantry and “here, use them for your baking.”

 

And this is the time for baking some treats by using white chocolate. This time I wanted to give some summer vibes, so white chocolate plus lemon flavor!

White Chocolate and Lime Oat Cookies

<Ingredients>

*Makes 6 medium sized round cookies

 

<Directions>

  1. Put oats in a food processor and process until they are perfectly powder-like. Transfer it to a big mixing bowl and add all purpose flour. Set aside. 
  2. Preheat an oven to 375ºF.
  3. Spread parchment paper on a baking pan and set aside.
  4. Mix butter, sugar, almond milk, lemon juice together in a mixing bowl and pour it over powder ingredients mixture.
  5. Start mixing the dough. When it roughly mixes together, add almonds, white chocolate chips and mix them again. Eventually it gets all together so keep going.
  6. Take out a small ball of the cookie dough and make a shape. Place them on the parchment sheet spread baking pan and continue to make the cookies.
  7. Transfer the cookies in the oven and bake it for about 15~20 min.
  8. Remove from the oven and let it cool. Enjoy!

 

<Cooking Tips>

With my oven, 15 min was good enough to enjoy crunchy outside, soft inside kind of cookies. But if you prefer it crunchy, turn off the heat after baking cookies 15 min, wait 5 min, and flip the cookies and cook them with remaining heat.

OMG. I think today’s creation turned out to be the best one ever! You might be surprised, but I never baked lemon flavored cakes or cookies until this time. I truly think why I didn’t…No wonder how popular lemon flavored baking goodies are in the world. The tangy refreshing lemon flavor with sweet white chocolate chips performs a perfect serenade in my mouth. 

 

When you pair ordinal chocolate with citrus, you’d choose oranges like this recipe, but if you want to try the white chocolate on this World Chocolate Day, grab some lemon juice and bake some cookies. It’s an absolutely smile promised treat of the day!

    Those white chocolate and lemon oat cookies sound wonderful. By the way my son doesn’t like white chocolate at all, I love it because its so creamy and buttery tasting, and in cookies white chocolate is delicious. I will definitely make these for myself. 💕😊
