And let me tell you…this is my final post about loquats this season. These yummy fruit allowed me to enjoy the tasty fruit as dessert and ingredients for baking goodies and left me such a sweet memory this year. I thought I could make more yummy treats to expand my repertoire of loquats, but well, this is the final post about loquat this year…I wish I had harvested more fighting birds and squirrels haha!

Loquat Cheese Pie
<Ingredients>

- Some pie crust from this recipe
Fillings
- ½ pack 8 oz cream cheese – room temperature
- 1 tablespoon sugar
- Some loquat compote from this recipe
Toppings
- A loquat compote halves from this recipe
- Some fresh mint leaves
<Directions>
- Preheat the oven to 375°F.
- Spread the pie dough in a muffin tin and bake it for about 10 ~ 15 min.
- Remove from the oven and let it cool for a while.
- Make fillings. Combine cream cheese, sugar in a mixing bowl and mix well.
- Add loquat compote and mix well by mashing loquats. Set aside.
- Place fillings inside of the pie cups and top with loquat compote and mint. Enjoy with freshly brewed coffee or tea!
<Cooking Tips>
You can make fillings by using a food processor, but this time the amount was small so I chose just mixing them by myself. If you’re making a big batch, it’s better to use a food processor by thinking about elbow grease when mixing them!
I hope you miss loquat just like me! And since this year’s cherry season is also ending, I’m like “sigh…can I still survive this year without them?” My dinner buddy heard it, and he was like “Yes of course! Peaches are still here, oranges, figs…anything!” As soon as I heard it, I was like “yeah you’re right. Next loquat season will be here before I know it.”

Oh you’re right! Cheese is made of milk, right?👀 I don’t like milk but love cheese, so it’s a great source for me to get calcium❤️❤️❤️
