Happy National Hawaii Day! Today I’m taking you to a virtual trip to one of the most popular destinations for a vacation, Hawaii!
We as Japanese people love Hawaii. It’s been a super popular destination for honeymoon for such a long time, and it’s ranked into people’s bucket list destination. I’m originally from Japan and it’s been over 15 years living in the US, but surprisingly I’ve never been to Hawaii. It was one of my lists to celebrate my 10 years anniversary to be in the US, but my dinner-buddy-back-in-that-time-just-my-boyfriend-and-now-my-husband picked NY over Hawaii, so I missed the opportunity.
But Hawaii is still on my list, so let’s just enjoy a virtual trip through my homemade food made in my kitchen. There are so many popular local Hawaiian foods like Lau Lau, Malasada, or saimin, but for today I chose Loco Moco!

Loco Moco
<Ingredients>
*For 1 person

- 1 egg
- 1 bowl cooked brown rice (I cooked rice but you can use convenient version like this)
- 1 patty (I used Fry Family’s plant based patty)
- 1 tablespoon olive oil
Sauce
- 100ml water
- 2 tablespoons ketchup
- 1 tablespoon workshire sauce
- 1 tablespoon cooking wine
- 1 tablespoon butter
- 1 tablespoon vinegar
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- A sprinkle of garlic powder
- 1 tablespoon all purpose flour & 2 tablespoon water mixture
Optional for decoration
<Directions>
- Make sauce. Combine all ingredients together in a saucepan and bring it to medium high heat. When it got thick, remove from heat and set aside.
- Pan fry a patty. Pour olive oil in a pan and bring it to medium high heat. Place patty and cook for about 3 min. Flip it over and cook another side.
- Make a sunny side up.
- Place rice on the center of a plate and place patty and sunny side up. Decorate it around with lettuce, tomato and carrot. Pour sauce over the patty and enjoy!
<Cooking Tips>
- The classic patty may be made with beef patty, but this time I chose plant based patty from Fry Family. It tasted great so if you’re interested in expanding your plant based diet, try it! My other recommendation is Impossible burger patty, and beyond meat!

I found out about Loco Moco several years ago, it is a go to for an easy and delicious meal. My first experience with it was in an all organic cafe, I just loved it. I recently watched a food travel show, some places use spam, some ground beef, I use either ground turkey or turkey breakfast sausage, it’s wonderful either way. Hawaii is definitely a unique and stunning state, I’m sure when you go you’ll have an amazing vacation, Aloha 🌺🌺

Hmmm the egg might be tricky if I try to make a vegan version… but this looks really good and now I want to try and figure it out all plant based 😂 Thanks for more cooking inspiration! It looks delicious 😁

Haha~ yes! At first I wondered how I could turn in to loco moco vegan friendly but gave up😂 I still haven’t tried vegan egg liquid yet but it’s going to give us scrambled eggs, right? I super admire people those who can stay vegan diet😌💕

Yes, Just Egg is really good, especially if you can find black salt (Kala Namak is it’s actual name, and the color is…pink haha) usually can find it in the Indian food section, it has a sulfuric flavor, so if you sprinkle that in the just egg as you scramble it, it comes pretty dang close to tasting like actual eggs 🙂 There’s also a plant based brand called BeLeaf, and they have a vegan fried egg. It’s pretty good, too!

Oh wait, I remember you told me about kala namak, and now it sounds like it’s the same one as Himalayan pink salt?👀💕 I have never seen the actual kala namak but have Himalayan pink salt on stock for my current salt is finished.
Also thank you for letting me know about vegan fried egg from BeLeaf! I just checked it online and wow, it looks just like the real one😋✨

It’s different from Himalayan pink salt. It’s more like a fine powder, but it is that pink color! it even smells like eggs haha it’s weird, but really flavors up dishes 😁
If you ever get the chance to try the beleaf egg, you’ll have to post a review on what you think of it. I haven’t had a real egg for about 4 years now, so I think it’s good, but I also am not the best person to make a comparison 😅

sometimes I make tofu scramble with the black salt, and it makes it seem like eggs are in there, too haha 😂
