Today’s my homemade cookies got a cheat point actually…one day, I was cleaning up my pantry to see which food is reaching its expiration date soon, and found a packet of ready to eat oatmeal from Proper Good…only the seasoning packet.
As I grew up eating savory porridge, I still feel weird for sweet flavored oatmeal. So as I looked back what I did for the oatmeal packet, I think I enjoyed plain flavored oatmeal by mixing ochazuke seasoning(it’s similar to Japanese furikake, the rice seasoning to make fancy rice balls called onigiri or simply sprinkle on a bowl of rice.) and abandoned but kept the apple cinnamon seasoning, by thinking “well, in some way and some day I can use it…maybe later.”
Since it’s baking season and apple season, I wanted to bake some apple flavored cookies and this must be the time to use up the leftover apple cinnamon seasoning, so here we are!

Apple Cinnamon Cookies

<Ingredients>

- 140g old fashioned oats
- 4 tablespoons olive oil
- 2 tablespoons sugar
- 4 tablespoons milk (I used oat milk)
- 1 packet apple cinnamon seasoning from Proper Good’s apple cinnamon ready to eat oatmeal
- Some walnuts – crushed
<Directions>
- Preheat the oven to 375°F.
- Prepare the baking pan. Spread parchment sheet over the baking pan and set aside.
- Put oats in a food processor and turn on the switch to make them powder style. Set aside.
- Mix olive oil, sugar, and milk together in a mixing bowl.
- Pour it over the oats and mix well, say, about 5 min or so.
- Sprinkle the seasoning packet, walnuts and mix well.
- Make the shape. Place them on the baking pan.
- Bake them for about 15~20 min. Cool them on a cooling rack.
<Tips for How to Enjoy Cookie Exchange Day>
- Have a cookie or a couple of them for you, pack cookies, pick who’s going to get the yummy cookies, and give them.
- To greet, say “Hey did you know, it’s national cookie exchange day so this is for you! …yes I said it’s cookie EXCHANGE day, where is mine?” haha!
- Do cool the cookies completely! If it’s still warm, the cookies get soggy from the steam in a packed bag or container…If you leave them for a long time, germs will spread. Remember, it’s baking season, apple season, holiday season, AND flu season too, so don’t ruin them! Wash your hands before baking, and cool the cookies completely before packing!

My kitchen was filled with the aroma of apple and cinnamon when I was baking them! For the photo shoot, I gathered some fresh apples but none were used, because all the task to make my cookie yummy was done by Proper Good. The chopped dried apples were perfectly chewy and dusted with a generous amount of cinnamon, so they matched my oatmeal cookies so well.

Some people would wonder why I didn’t use the oatmeal packet from Proper Good to make cookies for the first hand, and trust me, I tried but it didn’t go well. Since their ready to eat oatmeal is already porridge-like, it’s so hard to make a shape even though I added so much flour. And when it’s baked, the texture got sponge-like.

Dear Proper Good. Please make the seasoning available in a big batch! I won’t buy apple cinnamon oatmeal, but gladly get the apple cinnamon seasoning…and since they have more variety of sweet oatmeal available in their online store like caramel pecan, banana bread, choc, PB & banana etc, the baking season gets merrily for sure!

Yes that’s a great question and thank you for reminding me about cinnamon! I checked with Dr and she said yes as long as it’s not insane amount…she even had weird look of “why she is asking about cinnamon?🤔” 🤣
Also I have a very good baby supporter AKA my husband…When I was done photo shooting these cookies, my husband came to the kitchen and said “we don’t know what’s “PROPER” amount of cinnamon so they’re all mine!” and they really disappeared into his stomach😳 I could only eat a tiny one for myself…
The same thing is said to coffee or tea with caffein…I really miss a nice cup of latte🤣

My year didn‘t start too well, unfortunately. I got sick on January 1st and I spent almost the whole first week of the year in bed with the flu. Luckily, it‘s better now. 😊

I was unaware of National Cookie Day. Luckily no one brought me a cookie because I had none to exchange. Next year I will be prepared!
