Happy National Cereal Day! Did you know, today is the day to enjoy our every morning’s routine savior!
Cereals are so easy and quick to cook(yes, I call assembling cereal and pouring milk cooking!) On the busy morning, even if you’re debating whether you should skip breakfast, cereal is calling your name to boost your energy.
I could post my cereal with milk pictures on today’s post, but I wanted to make it unique and fun because cooking should always be a fun activity and yummy food follows after that. I had a limited amount of cereal left anyway, so I used them as a part of my appetizer’s ingredients to make both my dinner buddy and I can smile.
It’s oven baked so less oil=low in calories, and the crunchy texture is so fun when chewing.

Cereal Crusted Eggplant
<Ingredients>

- 1 large eggplant – sliced
- 4 tablespoons all purpose flour
- 1/2 cup water
- Some salt
- Some dried oregano
- ½ cup unsweetened cereal(corn flakes)
- Some sauce
<Directions>
- Preheat the oven to 375°F.
- Mix flour and water in a container. Set aside.
- Transfer cereal from container to flat container. Break them into small chunks by squeezing them. Set aside.
- Dip eggplant one by one in a flour mixture and transfer them in a cereal bowl. Coat the eggplant with cereal.
- Stack baking pan and oven-safe wire rack. Line the cereal coated eggplants and bake them for 20min on one side, and 10 min the other.
- Assemble your favorite sauce and enjoy!
<Cooking Tips>
It is a good idea to empty out cereal in a sealable bag and punch them, squeeze them to make the cereal small chunks. Sometimes there are “oh-wow-still-alive” types of cereal that try to run away from the container. What’s waiting for you thereafter? Pulling your vacuum from storage and kitchen cleaning which wasn’t on your to-do list of the day.
For the sauce, I used okonomi-sauce and the mix of sour cream and lemon pepper seasonings. Play with what sauce you use. The choice is unlimited!
Mmm, so good! By using cereal instead of ordinal bread crumbs, the texture becomes extra crunchy and this is what my dinner buddy and I loved for today’s recipe.

I eat cereal every morning. Kellogg’s Corn Flakes or Rice Crispies, or Rice Chex and sometimes I will have a hot cereal like Cream of Wheat or Oatmeal porridge.

Oh you don’t like eggplant? But I believe you can definitely try other ingredients too, like some meat if you’re not vegetarian, or zucchini, carrot…anything!😊

It’s not that I don’t like eggplant. I can’t eat it at all.
If I do, I get a full blown allergic reaction that lasts for a whole week.
