Happy National Zucchini Bread Day!
Aww I’m running today, but wanted to let you know this is the day for zucchini bread lovers and greet all of you here!
I made a slightly sweet version of zucchini bread before, but this time I wanted to make it savory, so here it is.
Freshly out of the oven! I tried my new baking pan, so I was so excited. Turned out it’s deeper than my usual baking pan and my zucchini bread had high percentage of veggies, so it took over 1 hr to fully bake…I usually bake my cake/bread in 30 min for the longest, so surprised that it wasn’t cooked in 40 min haha!

Savory Zucchini Bread
<Ingredients>

- 250g all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 100g salted butter – room temperature
- 1 large egg
- 1 cup oat milk
- ½ large zucchini (about 200g) – shredded
- 2 carrots – about 100g – shredded
- 1 hand shredded cheddar cheese
- 1 teaspoon dried oregano
- ½ teaspoon nutmeg powder
<Directions>
- Combine all purpose flour, baking soda and baking powder together. Set aside.
- Preheat the oven to 375ºF.
- Cream butter and mix with egg. Pour the egg slowly to avoid the butter getting lumpy.
- Pour milk and mix well.
- Add carrot, zucchini, cheese and spices. Mix well.
- Add powder ingredients and lightly mix.
- Spread parchment sheet on a baking pan and pour the batter. Transfer it to the oven and bake for about 1hr. Serve it warm.
<Cooking Tips>
Adjust baking time depending on which baking pan you are using. If you’re using a flatter pan baking time should be shorter than 1hr, say, 30min~40min?
Mmm, yum yum! My dinner buddy prefers savory brunch on weekend, so it was a good weekend start for him. But next time, I’d bake the old version as slightly sweet because I need to update my zucchini bread pic…a big applause to natural light and my growing composition skill haha!

I’ve only known zucchini breads made with yeast (and a lot of time to let the dough rise) up to now. The preparation without yeast and the time saving makes it even more interesting to me. 🤩👍

Thank you Livia! That made me surprise too but people call pastries(in this case, a cake) is sometimes called “bread” even though they don’t require using yeast. Banana bread and of course today’s food, zucchini bread, are the two of the perfect example😊
