Rosy Cardamom Milk Pudding

Do you like pink? If so you should wear pink today, or eat something pink to enjoy this unique day!

Today’s post is inspired by an afghan cuisine restaurant we went to in Seattle, WA. We enjoy exploring world cuisine. We tried several Persian or Mediterranean foods over the past years, and when we found out there was an Afghan restaurant, we decided to try with full excitement. We enjoyed their food including dessert, and that dessert called Firni absolutely blew our mind. 

 

<What is Firni?>

Firni is an aromatic custard dessert made with milk, rose water, cardamom, and crushed pistachio.Some restaurants make it more like soup style, but others make it like pudding. As ingredients suggest, when you bring a spoonful of firni, your nostrils catch the floral aroma of rose first and that will burst in your mouth and cardamom’s delicate flavor follows after. Crushed pistachios on the top adds a nice crunchy texture and…mmm, just explaining it to you, my mouth starts to drool!

 

Unfortunately our neighborhood doesn’t serve Firni, but the sweet memory made me nostalgic so here it is: my version of Afghanistan dessert, Firni.

Rosy Cardamom Milk Pudding

<Ingredients>

<Directions>

  1. Combine all ingredients except pistachio in a saucepan and bring it to boil.
  2. Stir well and when it’s almost boiling, remove from heat and let it sit until the liquid’s temperature is reduced to room temperature.
  3. Pour the liquid in bowls and transfer them in the fridge. Wait until they’re set, say, 2 hrs.
  4. Sprinkle crushed pistachio and serve it cold. Enjoy!

 

<Cooking Tips>

  • You can absolutely use rosewater instead of rose essence. Lucky you!
  • If you’re using rose essence, try dropping it from the tiny amount. If you’re using a nectar type of rose essence like me, this tip is very important. You probably don’t want a shocking pink dessert. If accidentally it happens to you, don’t worry, just pull a mirror ball from your closet and play the blasting disco music! Woo hoo!

Mmm, so good! I tried pudding/jelly style this time but probably will try it in soup style with much more amount. I want more!

  4. I wonder if I could pull this off by swapping the gelatin for agar agar. I might have to give it a try 😁 It looks delicious!

      Yes definitely you can! 👍✨Just keep it mind, agar agar gives you more like harder texture than gelatin, so the texture is a bit different from what I experienced. You’re good at keeping on vegan diet, I’m sending you a big applause👏💕👏💕👏

    Ohhh, that pudding looks amazing! 🤩
    I am a huge fan of cardamom but unfortunately, pistachios are crazy hard to get here, 😞 and I’ve only tried a dessert with rose essence once. I couldn’t help feeling like eating a rose bouquet 😁, and that was too strange for me. 😁
