Hearty Veggie Soup

Here is another version to enjoy root veggies that were cooked soft and the full flavor spread all over the soup! When you bring a spoon of soup, you’ll feel the bold flavor of each veggie become one united, complete soup:) If you are wondering how to use root veggies that were sitting in the back of the fridge, pull them all and cook nice hot soup:)

Hearty Veggie Soup

  • 1 cup broccoli stem – chopped
  • ½ medium carrot – chopped
  • ¼ onion – chopped
  • ¼ field roast – chopped
  • 1 tablespoon olive oil
  • 2 vegetable soup stock
  • 3 cups water
  • Salt and pepper to taste



  1. In a pot, pour olive oil and bring it to medium high heat. Add broccoli stem, carrot, onion, field roast and cook until they are soft.
  2. Add water and bring it to boil.
  3. When the water is boiled, add soup stock. Sprinkle salt and pepper and transfer to a bowl and enjoy!
