Peach Pie

Happy National Peach Pie Day and It’s National Peach Month! Why don’t we enjoy sweet yummy peaches this month? 

 

Yes it’s peach month, and peaches are in full bloom! When I was in Japan, yellow peaches were only available in a can, so fresh peaches were always white ones. Because of my childhood observation, I thought peaches get color changes whenever they are cooked…can you imagine how I was shocked to find fresh yellow peaches in a market in the US? I bought a bunch of yellow peaches and enjoyed them for my healthy dinner. I found yellow peaches have a more tangy side and white ones are sweeter and juicier…do you agree with me or do you have any other opinion towards them? 

 

Anyways, I bought 2 kinds of beautiful peaches the other day and that juicy white peaches tempted me to bake some pies.

Peach Pie

<Ingredients>

  • 2 white peaches – cut into small pieces
  • 1 tablespoon sugar
  • ¼ cup water
  • Some sprinkles of cardamom powder
  • Some pie dough from this recipe
  • Some all purpose flour to avoid the dough to stick into the board
  • Some fresh mint for garnish

 

<Directions>

  1. Make peach fillings. Combine peach, sugar, water together and bring the liquid to a boil. Reduce heat to medium heat and cook until the peach is soft.
  2. When the peach gets softer, mash them with a fork. Remove from the heat.
  3. Preheat the oven to 375°F.
  4. Sprinkle all purpose flour on a baking board/cutting board and spread pie dough with a rolling pin. Cut it into a rectangular shape and place the peach fillings on the front part of the pie dough.
  5. Insert knife in the back of pie dough, twist them and pull them forward to close the pie.
  6. Bake the pie in the oven for about 15 min.
  7. When the pie is baked, remove from the oven and let it cool for a while.
  8. Sprinkle some cardamom powder and place a mint leaf for garnish. Enjoy!

 

<Cooking Tips>

  • If your pie dough is frozen, defrost it by leaving it on the kitchen counter. Never use a microwave. Especially since my pie dough has a high % of butter, it melts so quickly and it’s hard to recover from that point.
  • IF you have a favorite pie shape or adventurous image in your head, don’t hesitate to try it! The boss of your kitchen is you!

 

The pies were crispy and flaky, and those juicy peach fillings definitely made my summer’22 memory sweet and yum! A pinch of cardamom powder boosted the flavor too, so I hope you can enjoy your summer with yummy peach pies just like me.

        Hmmmm 🤔 probably not that combination but I have had to decide between chocolate or peach ice cream 🍨 🤤 I chose both! Rite aid has the best ice cream…

    This is such a wonderful post, I love peach everything. I make my own refrigerator jam, this year I made mostly peach/cardamom it’s so good. When I had some leftover pie crust I made a couple of peach hand pies using my peach jam as the filling.v

        You’re welcome it’s my own simple recipe. I peeled the peaches and then cut them I put them in in a heavy pot cooked them on a low heat until soft, added some organic cane sugar to taste, a bit of salt and a small amount of ground cardamom. I let it cool and put it in a jar. I think I made about 5 or 6 jars. Put one in the fridge and the rest in the freezer. 🙂

        Actually, I made that batch of jam last summer, so it’s almost home. My son discovered a peach stand in our neighborhood and picked up enough fresh peaches to make a new jat or two!

        Ah that’s great👀💕 Lucky you, finding good fruit stand is sometimes hard depending on the location (my neighbor don’t have peach field anyways, so none of them I see it unless I drive 1+ hour🚗) Enjoy peach jam and fresh peach🍑💕✨

    That peach pie looks delicious! 🤩
    It just reminded me that Georgia, the state where my aunt, uncle and cousin live, is called the Peach State. 😊 Have you ever visited it?
    My personal favourite among the peaches is the flat peach, also known as donut peach or saturn peach. The stone/fruit flesh ratio is just perfect in that one. 😁

      Technically I’ve been to Georgia because of the transit of my flights…but we only had a couple of hours, so we’re stuck in the airport😭

      And I think I remember you told me about donut peach! I still haven’t tried them because they’re rare kinds in my neighbor, but your comment reminded me and tempted to try it soon😍 Do you bake something out of the donut peach or just simply biting it is the best way to enjoy them?

        We only bought the donut peach in Italy and since it was quite expensive and crazy delicious, we usually ate them right away. 😁
