Good morning, everyone! Did you know how special the day is?
It’s World Egg Day and we must celebrate it while enjoying them(Hope you are not on a vegan diet.)
Eggs are my regular item for breakfast. They are versatile so we can just fry them as simple as it is, boiled, scrambled, raw…(Yes I know some people say “NO” while thinking about possibility of salmonella infection, but I grew up eating beaten raw egg over rice and I must tell you it’s so good!!) and for those who have a sweet tooth, eggs still appear a lot to make your pancakes, waffles, french toast as fluffy as a pillow!
Today’s post has nothing special but I wanted to share what I typically eat for breakfast.

Spinach Mushroom Omelette

- ½ bunch spinach
- 4 mushrooms – chopped
- 1 tablespoon olive oil
- 3 eggs
- ¼ cup almond milk
- 1 hand cheese
- Some salt
- Some black pepper
- Pour olive oil and bring it to medium high heat. Add mushroom and spinach. Cook for about 3 min.
- Beat eggs in a mixing bowl and pour almond milk.
- Transfer it to the pan and add cheese. Stir well.
- Sprinkle some salt and pepper to taste.
Mmm, this is how I start a typical day and because of this yummy breakfast, I can stay energetic.
And…for those who noticed it’s not really omelette but scrambled…hehe, sometimes a tiny (but a common) mistakes happen in my kitchen lol!
